RECIPE: Sexy Strawberry & Jalapeño Scallops

After I made these pucker-up worthy scallops,  I wanted to court myself! Appropriate for any date night, there isn’t much else to say so hit play on the Spotify playlist below and LET’S GET COOKING!

What you’ll need:
1 cup strawberries, chopped into small even dice
½ jalapeño, finely minced, seeds and all (turning up the heat!)
handful of cilantro, finely chopped
juice from 1 lime
salt & pepper to taste
6-9 med/large scallops
ghee

Combine all the topping ingredients in a bowl and place aside.  If it’s already steamy in your kitchen, place in the fridge until your scallops are ready.

Take your scallops and pat them dry with a paper towel. Season lightly with salt and let them sit while you heat the ghee in the sauté pan.

Add a tablespoon of ghee to a sauté pan over high heat; the ghee needs to be very hot before you add the scallops.

Place the scallops flat side down, don’t overcrowd the pan (otherwise they will steam, not sear them).

Resist the temptation to move them around: this will ensure the nice crust you want.

Important: It takes only a couple of minutes for the crust to form and they are ready to flip. You’ll ideally want to flip once, and remove from the heat while the center is still slightly translucent. If the edges begin to ‘crack’ then you are beginning to overcook the scallops.

Once they’ve formed the nice coloring on both sides, remove them from the heat & immediately plate them.

Spoon the topping onto each scallop and serve.
