    Check it out, I learned that 90% of the menu is already gluten free. Dairy free modifications made easily, too. Tortillas are prepared in-house, simple ingredients.

    For the strict paleo peoples, corn is not considered paleo. My paleYOU includes occasional corn, especially when it’s handmade with an enzyme pill in my purse just in case.

    Another tweak-session to my Non-Dairy Cauliflower Casserole. Today’s version includes a creamy sauce made of soaked cashews, roasted red and yellow bell peppers, garlic, nutritional yeast, and cassava flour. s&p too, duh.

    Cauliflower roasted separately first, and tossed with sautéed shiitake mushrooms in duck fat and coconut aminos before being drowned in the sauce and re-baked for 15 minutes to set.

    If the flavors of my dishes don’t say PRESENT then you might as well forget the dish all together. For better or worse, that’s my ultimate goal when I’m cooking: create an experience in which when you are enjoying my food you feel like life is wonderful. ✌🏽#eatplaycrush

    In a couple of recent DMs I’ve been asked about what podcasts I listen to and the answer is not many, and none regularly. It really depends on the guest and the topic. I am uninterested in most business and self development books, choosing to devour fiction. I learn best the hard way and at my own pace. Ultimately, I believe in “you do you and I’ll do me” and as long as we’re both happy and paying it forward, we all win. *thumbs up emoji* #eatplaycrush
