RECIPE: Freddy’s BBQ Joint Ribs (House Of Cards)

By now most of you should have binged your way through watching House Of Cards.

Are you feeling a little dirty too? I think I need therapy to process it all.

That ONE scene towards the last couple of episodes that threw us ALL for a loop. You know which one I’m talking about! You were probably thinking, WHAT? No! Really? I don’t understand!

But hey, Frank slept well that night. He needed it.  Frank

Anyway, rewinding back to where Frank found himself often to enjoy some of life’s pleasures, RIBS!

I was heart broken to see that his own dealings shut down Freddy’s BBQ Joint. When Frank goes into that dialogue with us, in which is admitted hypocrisy was intense!

Clearly I got emotionally invested in this show, but who didn’t?

Doing some research, I learned that Carolina ribs, where Francis is from, would be mustard based, and less saucy. Taking that into consideration, I experimented with 4 versions of method and sauce ingredients to come up with ribs that would be authentic to having a mustard influence from his home state, and balance just enough sauce to emulate Freddy’s style we see on the show. Go ahead, judge me for my thoroughness – and then enjoy the FRANK out of these ribs.

As I wrote out this recipe the other day, the man sitting next to me received a call – it was the same ringtone from the show!

Whether you watched the show or not, you will LOVE these delicious and pretty hard to mess up ribs.

Freddy’s BBQ Joint Ribs

What You’ll Need

½ cup coconut sugar + extra for rub
½ cup tomato paste
¼ cup apple cider vinegar
¼ cup honey
2 tablespoons mustard
1 tablespoon turmeric
2 teaspoons salt
1 teaspoon black pepper
¼ teaspoon cayenne pepper
lemon juice from ½ a lemon
2 racks baby back ribs
salt/pepper

What To Do

Whisk all the ingredients (except for the ribs, obviously) together. You want it to be just slightly thick, but not pasty. If it’s too thick simply add some water and keep whisking.

Taste it, here’s an opportunity to exercise your personal palate.

Do you like it sweeter? Add coconut sugar/honey
Do you like it spicier? Add cayenne pepper or crushed pepper flakes
Do you like it tangier? Add more mustard

You get the point.

When your personal boss sauce is achieved, set it aside

Lightly rub the ribs with salt/pepper/coconut sugar. Be conservative (unlike Frank Underwood) as baby back ribs already have some delicious natural flavor

In a crock pot, pour a shallow ½ cup or cup (depending on the size of your crockpot) of water to keep the ribs moist

Place the ribs in the crockpot and cook on low for 3-4 hours, more if you want them SUPER fall of the bone tender or less if you prefer some texture to your ribs

Once they are cooked nice and slow, line a baking dish (you’re lining it so clean up is easier, you’re welcome) and place the cooked ribs inside

Coat with your sauce, sprinkle just a touch of coconut sugar if you want some extra sweetness to your bites

Place in the oven at 400 degrees for 5-10 minutes, and for a final 3-5 minutes throw it up to broil

The sauce will stick to the ribs like it’s holding on for dear life, much like Zoe…well, we all know what happens to her, meow

The ribs are clutch just like this, and would be most true to the kind of ribs Freddy would have served, but feel free to throw some more sauce on them when serving
