Italian Eggplant ‘Panini’

I may not be able to eat cheese, but that doesn’t stop me from cooking with it for clients that can have it. PaleYOU. ?

Spicy Italian Chicken, Mozzarella, & Pesto Eggplant “Panini”. The eggplant slices were rubbed down with olive oil and salt then broiled crisp while I prepped the garlic, pepper and tomato chicken.
Layered with mozzarella and baked again, then Pesto’d (woah, new word!) before topped off and garnished with lemon zest, greens, pepper and red pepper flakes. ?? #eatplaycrush #privatechef
