Grain Free Koshari

Grain-Free Koshari. All lentils here, including the pasta. I thought I had cauliflower to make the rice base but, just kidding to myself, because I didn’t.
If you eat rice, make a rice base. If you don’t eat rice, make a cauliflower rice base. If you don’t have rice or cauliflower, skip the rice.
Macaroni, I used lentil pasta. Ingredients: Just lentils. You could forgo this pasta shape and use @cappellos grain-free fettuccine pasta.
Lentils, sprouted and cooked lentils with salt.
THE SAUCE, the amazing sauce: In a sauce pan, with ghee or coconut oil or whatever over a medium-high heat, crisp a large diced onion until dark brown, then add a diced garlic clove into the party and cook another minute.

Remove half of this party and set aside on a plate.
In the remaining onions/garlic, add 2 tablespoons of white vinegar, half a cup tomato paste, a couple of diced tomatoes, black pepper, salt, cumin, and cayenne. Mix it well with a spoon and add some water, incrementally, until it’s thinned out just a touch.
Let this simmer for 10 minutes.
Then pile it up, bottom to top: “Rice”. Macaroni. Lentils. Sauce. The side onions. And, not shown but recommended, diced cucumbers, tomatoes, lemon, salt, cumin.
